What is the reason/use for the screen that displays "engine hours and life time revs"? My boat has a display for engine hours but why our cars? How is this information used? and when?
I guess it could give you some indication of what kind of use the car has had. To me a very high rev count per hour could indicate track use. Miles put on the car in urban traffic should show more revs per hour than miles generated by highway cruising, if you were looking at a used car to purchase. I guess that information could be valuable to a mechanic looking at failure scenarios. I'm just making stuff up, but some quick thoughts.
I know that city fire department maintenance divisions make use of these figures, as fire engines will frequently sit stationary for days at a time pumping at or near capacity at major fire scenes, not building up any road miles but a LOT of engine hours. Not sure how useful the information actually is for cars.
Different company’s use the information to monitor fuel usage, like railroad vehicles have a GPS software that monitors engine idle hours to put into their fuel consumption numbers, then pass that information down to the supervisors of those vehicles to reduce those idle hours so that they can have another chart and graph at the end of the year to talk to shareholders about how they reduced X amount of engine hours which saved the company X amount of dollars in fuel cost. Granted, I don’t know any company that has vettes as company vehicles, but it’s probably just a standard now.

My riding tractor has an hour meter too. My guess is that it is more accurate than miles because if you drive 1000 miles but idle it through the night like some diesel trucks, that might indicate wear on the engine?

Yes my diesel tractor and riding mower have hour meters. When it gets to 50 hours, the tractor has to go back to the dealership for a complete inspection and fluid change. Neither has an odometer.
I used it when I bought my 2014 from Vroom. The carfax was wonky, mileage went from 3800 to 42,000 in one year at state inspection, then back to 4800 in the pics they had up on the sale page. When the trailer arrived the first thing I did was take the 4800 miles and divide it by the hours on the clock. Was around 40 mph. If I did same with 42,000 miles and it was over 300 mph. So obviously someone at DMV had fat fingers. Since I've had it inspected twice since purchase carfax has corrected the error

Very useful indeed. It can be used to validate "freeway miles" on for sale cars, unless the car is from LA, or SF, or Houston.......
