I find the touch screen painfully slow to respond to touch input on all functions that the screen controls. Any possibilities of a software or other fix. Very annoying latency problem.

The answer to your question, though, is no. If you're talking about the 500-1500ms delays for some of the screen switching, etc. that's the 'fault' of the back-end processing.
The head unit is about as fast as they get on GM cars, but it's not going to act like one of the newer aftermarket (Pioneer Elite, etc) units out there.
You have to remember that it's only been a few years that the head units have not required the disc for navigation to be left in the drive. That's the kind of technology we're still on from a head unit perspective.
When entering in a telephone number to dial. Believe me, at 62 my brain is not speeding along. Would anyone know if there is some sort of software fix down the road. If the display on one of the responders z51 was replaced and it seems faster, maybe they have tweaked something. It's not in the physical press as much as it is the response to that press.

A lot of different makes are like this, just so you know. I'm not a big fan of the touchscreen at all..... IMO, screens are for looking at, I'd rather use a mouse or wheel/button to get around.
What if you were a ballerina and a chef? You'd suck at both.
I always try to avoid the touch screen, and use the navigation button that says "Menu" on it underneath the screen. It let's you toggle all the functions very fast.
