First, if this has been discussed previously pardon, I did a search and could not find anything.
So My C7 Z51 has been sitting for a couple of months now, (winter on Long Island has been cold this year). So, should I let it remain without starting or start it up and let it run. I have the battery charger option and keep it plugged in, the car is covered, and on those ramps that avoid flat spots; kept in an attached garage that is not heated. So what do you guys suggest?

I was thinking that it should sleep, due to the condensation in muffler etc., so my thinking is confirmed.

Unless you are going to start it up and let it get all the way up to temperature, and then hold it at temperature for 20-30 minutes, then just let it sleep.
My C7 has been asleep since mid Sept and will not awaken until late May. I always let my C5 sleep for long periods also with no issues what so ever.. Just use a battery tender, wash and wax before covering with a good car cover and fill up gas tank and add StaBil..

Yup did all that, in fact I used the new stuff that releases vapor above the tank. I wasn't sure if "fogging" the engine, (what is done to boat engines - adding oil into each cyl, was necessary). I never heard of anyone doing that but, I just wanted to be sure.

WOW! You mean to tell me that your car is not used for 8 months? I admire your ability to not have the "Corvette" fix for that long. Our car sits for 3 months and by the end of February I get antsy to drive it.
I agree with sleep also unless you can get all of the fluids up to temperature. Change oil right before its winter hibernation. If possible to find in your area use non-ethanol fuel for the last few tanks before storage. Alcohol is highly hygroscopic and "corn fuel" does not age well and is prone to forming gummy deposits. Second best solution is to treat with stabilizer well before storing to make sure stabilized gas is used throughout the fuel system and this should be done even with good, no corn, fuel.

Yes unfortunately this is the case. I work overseas in Dubai and I only get to drive it when I go home on vacation. I have considered shipping it over here but thought better of it. Now when I go home I REALLY enjoy opening my garage door..
Not gonna lie, my C7 sleeps a day maybe two tops. I take daily driving my C7 literally as its my primary mode of transportation. Kudos to those who can actually wait to drive, but I'm sure I's be one of those nutjobs driving in the snow

In the same boat but only due to our long Canadian winters.....it does suck but absence makes the heart grow fonder..
Mines being sleeping over a week and the weather doesn't appear to be improving until late this week Would cry if I had to actually put it away for the entire winter.
