Not sure exactly what you're after but I did some testing with different levels of rear aero at VIR and Summit Point earlier this year. In all case I kept the stage 3 front aero.
The net of it was that I saw no meaningful decrease in top speed with stage 3 vs stage 1 rear aero but I could most definitely feel a difference in high speed corners. With the stage 1 aero the car was not at all confidence inspiring and felt loose in high speed corners. I just run stage 3 all the time now.

What was involved in taking the rear spoiler from stage 2 down to stage 1? Can the side "flip ups" be removed quickly and easily or is there adhesive/etc. involved?

There is trim tape between the pieces but if it's warm out and you move slowly you can peel the stage 2 winglets off once the bolts are removed. For testing I just left the winglets off all together as opposed to putting the stage 1 covers back on.
