Default C7 Z06 overheating??

Hey everyone, I just traded my 17' Grand Sport for a 16' Z06. A little history on the car so you know as much as I know.

The car had its original engine blown because the previous owner ran out of meth and the tune was heavily reliant on it. The engine was replaced at a tuning shop with a GM crate engine straight from GM. It's still in its break in period so I'm taking it easy on it. The car was then retuned to factory and that is now how it sits. It has headers, exhaust, haltech intake and a cs oil catch can.

When I test drove the car I smelled a bit of coolant, I told the dealership I wanted it sorted out by the shop that replaced the engine as this is the primary shop that they use. They agreed and it was put in the papers. When I picked it up he told me the shop said it was only a bit of coolant burning off of the engine after install and he went over the entire car thoroughly 3 times over to ensure nothing was wrong. I spoke to the shop as well and he ensured me the car was mechanically sound as he himself took it for several long drives and the car was running perfect.

Now a day later from picking it up, maybe 100kms of driving total which was just home and around town briefly and I can smell the coolant under the hood which I asked to be taken care of and it is overheating like crazy. I got the ac off due to heat and the overheating light which I turned the car off and cycled it immediately to keep it cool. I was doing some troubleshooting and I shot my rad hose exiting the tstat housing with a temp gun. It was 90 degrees Celsius and my lower was 75 degrees Celsius. I felt like it wasn't very hot so I changed the coolant temp sensor to see if it was faulty. The problem still exists. The fan also comes on in high output and stays on for about a minute after the car shuts off. The outside temps were mild tonight as well.

Tomorrow morning I am planning on removing the thermostat completely and taking it for a short drive in my neighborhood to see if the car warms up or not, in which case if it starts to climb like crazy I have to assume it's the water pump. I do have an extended warranty on the car but I am limited to the shops I can use and most are 1 hour away which is why I'm trying to troubleshoot small things or mistakes before bringing it in. I do have a fair amount of experience with older LS engines and building track cars but this is my first Z06 so not much experience with the LT.

Now along with checking the thermostat, can anyone suggest anything I should look for that maybe was installed wrong by the shop? Maybe supercharger coolant hoses on in reverse and stuff like that? I'm just a little bit skeptical as he claims he could not find a coolant leak or smell anywhere and now that I am in possession of the car I have these issues immediately.

I'd also just like to make an appearance here as I have been a community ghost until now. That being said, Hello everyone! 😊

Any further info on what the problem was?
