I’ve been trying to build my Grand sport for a year and a half now, and with everything finally coming in from back order I’m on 4 months waiting on the shop to give me the word that my rotating assembly is done. I don’t know if I’m being impatient or this is actually too long…

Assuming they have the parts, a week....may two or three. Obviously if they have a lot of work and you just show up it'll take longer but 4 months sounds like something is up.
For context, I scheduled my car to go into the shop for some engine upgrades (cam, heads, intake, headers, fuel system upgrade, tuning, clutch swap, etc) in early Jan. I'll drop it off later this month and it'll take a couple weeks to get it back.
