Let me start off by saying that this is a 2018 Grand Sport with the OEM battery.
I typically drive the car about once a week and have had no issues. I started up the car today as normal but needed to finish some last minute errands so I shut off the car for about 5-10 minutes.
I may have accidentally left the electronics on when I left, but I am not sure. When I came back to start up the car, it would turn on the electronics and click, but doesn't turn over.
From the sound of this video, is this a battery issue or something else?
Another time when I tried to turn it on, my interior lights kept flickering to the beat of the clicking (it clicked almost 10 times in a row).
Driving it once a week is not charging the system. Get a C-Tek battery maintainer and after you get a new battery, start hooking up the maintainer every time you park it in the garage.
As far as driving once/week not charging it.. not necessarily true. If you're driving for 30+ minutes when you drive, you're sufficiently charging the battery.

I do take her out on spirited drives once to twice a week, so this is good to know. But I'll still be ordering a new one since this one is 4 years old anyways.

Odd.. 4 years is a pretty early death for a battery. Other than batteries that I have repeatedly flatlined (and I mean dozens of times), the ~7 year mark is about where I'd even start to consider replacement.
Just happened to me this past weekend. 2016 on original battery. Car was running and all the systems started cycling on the dash/infotainment system. I went and swapped the battery out with an interstate AGM group 48 battery and all lights were gone. Drove it for around 30 minutes and it was good to go!
