I just purchased Forgeline GS1R Wheels Satin Black Front Wheels: 18x10 and Rear Wheels: 18x12. I am looking for your suggestion for tires for HPDE that could be driven to the track and also options for tires that would be trailered and swapped at the track. I am considered an advanced driver, My first time with a 2018 GS Corvette.

I'm in the exact same boat, but I'd like to run some used slicks on the 18's. Some track videos on youtube mentioned squared setup on the GS works really well for the front end, plus you can rotate front to back.
The most popular GS setup is 18x11 front and 18x12, 18x12.5, or 18x13 rear. I have two sets of track wheels both having a 18x11 front and one set with a 18x12 rear and the other has a 18x12.5 rear. The big benefit is being able to run a 315 front tire. 18's open up a lot of tire options from R-compounds that can be driven on the street to used slicks and the prices are much cheaper.

What sidewall heights are popular when dropping down to 18"?
rear stock diameter for the car is 26.6 inches, the 335/30/18 diameter is 25.9 inches. What is the impact on gearing, speedometer, etc from a reduction in diameter of 0.7 inches??

It will put the car 2.56% slower than the speedometer reads. So at 100mph you'll actually be doing 97.44.
315/35/18 would be .2% faster. So for me it sounds like a square setup in 315 r-comps would be easiest.
