New to C7's .. I have 75k on mine and expect the clutch replacement will probably be on my watch.
My understanding is that the clutch is between the engine and the torque tube. To replace the clutch, the 'official' method is to raise the car, drop the rear subframe, transmission, and torque tube.
But ... would it be easier to yank the engine instead? Disconnect the headers, cooling, etc. and leave the torque tube (and everything behind it) in place?
Back in my Subaru days, without a lift, pulling the engine to replace the clutch was not difficult.
Yes, you can do it that way but I would say it depends on what clutch you are installing (single, twin disc, or triple disc) along with the tools and equipment you have access to. If a single or a twin I would pull the transmission and tq tube assembly. It is less work and easier to line up especially if you separate the tq tube from the transmission.
