Replacing my 2016 Stingray battery seemed pretty straightforward, but after installing the new battery I have lost nearly all electronics. Doors will not open, car won't start, dashboard is dark, etc. Also, taillights and front driving lights are on. Key FOB has new battery. Anyone ever experience something like this. Thanks.

Check your connections. Make sure they are as they were aligned from the factory and tight. If you're sure of the connections, check the 350a fuse to see if it's blown.
with all the above. It might seem that a nut is tight and yet the connector is not fully seated causing a bad electrical connection. It may pass a low current to keep some instruments on but not a starting load....and all sorts of other weird possibilities.
As mentioned, check that the little black wire on the ground strap is still intact. Also, that power fuse block (the red handle) is a bear to get seated properly and the 13mm nut seated correctly. If that's not on properly you can have all kinds of gremlins (such as you describe). Remember to disconnect your ground cable when you go to fiddle with the power fuse.
I am having the same thing with my 2015. Just had to replace battery when the car would not start after being gone a week. I have checked all connections several times and have installed two new batteries thinking the first one might have been bad. It was from a chevy dealer who tried to sell me a new battery with corrosion on the terminals (I didn't accept that one). Let me if you have success and what you finally did to start the car.

Scott. In my case, the issue turned out that I had no tightened all the connections sufficiently. They felt tight and I was cautious to not strip any threads, but apparently they were not tight enough. I disconnected both terminals and the separate red wire; cleaned everything with a wire brush then torqued down all the connections hard when I reconnected. It has worked well since. I finely got the car started. That positive terminal connection is super sensitive. I reconnected it carefully at least 5 times before I got it right.
