Seat removal
Soon I’ll be removing the seats to install sound deadening material on the floor.
must I disconnect the negative battery lead to avoid air bag deployment?
if I do disconnect the battery will I have to reset all settings on the infotainment screen - radio station settings, etc?

You'll need to index your windows. Memory settings will remain as I recall. Pretty sure the dash and HUD will default back to stock settings so if you customized them you'll have to update that again. For instance, regardless of mode my HUD and IP are always in track mode vs defaulting to whatever MRC mode the car is in.

Been around since the C6 arrived on the scene for the 2005 model year
It's explained in the Owners Manual (which is available online as a pdf file for free)

FSM says to remove negative battery cable. Make sure you have the seat positioned so you can get to all 4 bolts before disconnecting the cable.

Before disconnecting the battery, just...
move the seat all the way forward and remove the rear nuts.
move the seat all the way back. Remove the front nuts
Move the seat slightly forward and then tilt the seat using the seat controls so it's easier to access the connector.
Disconnect the battery.
Wait 15 minutes so the airbag system is fully discharged
Disconnect the connector and remove the seat
