If you turn the temp **** to the coldest setting, the A/C turns on. Also if the temp is set to 61* and press the A/C button on, the A/C turns on.
Is there a difference between the two settings. I couldn't find any reference in the manual.
Sure there's a difference. 61 F is a set point that the system will try to maintain. LO will make the A/C run continuously until the system reaches a balance with the ambient temperature and humidity - as cold as the A/C has capacity to cool - may have ice cubes exiting with the cold air.
Just like cruise control vs. holding the throttle to the floor...

It will stabilize at 70 degrees where the sensor is located. That isn't where you are located. On hotter days you may need to set the temperature lower to maintain the same comfort level.
The coldest setting on the AC is like the "max" setting on older GM products. It will
close the recirc door and run the AC compressor almost continually only cycling it
off to keep the evaporator above the freezing point so condensation won't freeze
and become a block of ice preventing air flow.
