Z06 is a model. It is not an option on the Grand Sport. It's just a minor difference....supercharged, 190hp more plus more torque, composite torque tube. Yes, "minor" is used as sarcasm
Z07 is an option on the Z06 or the Grand Sport but uses model specific parts regarding the suspension. Same CCB brakes
AWE exhaust.....may or may not work with the OEM NPP controls. Depends what is on there and if AWE even offers a version that still uses the factory NPP actuators. The company is fine and I've never heard of any issues with their systems....I had their mid-pipe for years...but it's up to you to like or dislike the sound and volume (particularly if it doesn't have the NPP actuators)
Never heard of coolant leaks being a concern on any year C7. I'm sure they pop up from time to time like any car. They are certainly not systemic
I had a rear wheel crack on my 2019 at <10k miles. About a million threads on wheels cracking. Either live with it potentially happening or buy new wheels in advance. Many 10s of thousands of Z06s and Grand Sports on the road without any wheels issues. Those that have had it happen squeak the loudest.
2019s are solid cars. No different than buying any other used car. If it's a 3LT, check the dash for the leather bubbling. If the temps seems funny, change the thermostat

I thought Grandsport without Z07 Package has smaller breaks - this is what I am hoping since I hear the Z06 Breaks are huge expense to replace

Z06 and Grand Sport have the same brakes, both the standard J56 iron brakes and the optional J57 CCB brakes that are part of the Z07 package. The Stingrays....base and with with RPO Z51....have smaller brakes.
The GS brakes will last a loooooooooooooooong time unless you plan to be a track rat. "huge expense" is a relative term. New front rotors will be in the $700ea range for iron brakes unless you feel compelled to go to a dealer and pay full MSRP of ~$1200ea. CCB front rotors are around $1500ea....or >$2400 at a dealer. Z51 rotors are about $150 each.

I've replaced both rear wheels and 1 front on my 19GS. I've since went to Continental Extreme Contact Sport tites and no problem no problem since.
Budget for rims. It is not IF but WHEN. I have been through 3, and the new factory rims are no better. If you can get tire and rim warranty get it. I did and all 3 rims were paid for and it more then triple paid for itself. Once it expired earlier this year I ordered a forged replacement set. Still debating if I want to hold on the stock rims or sell them.
Otherwise, I have 55k miles and no issues (knock on wood). M7 though, not auto.

All depends on where and how you drive. Thousands of wide bodies with oem wheels still on and fine. Should they be forged instead of cast? Absolutely, but most manufacturers were convinced that cast meets the requirements. Ask the Beemer boys. Major b÷ching about the oem wheels from them.
Pull the trigger. Get the car!!! I have a 19 GS, 2LT, Heritage Package Convertible with 35,000 miles. I bought it new and within the first 10 months I bent 3 rims on a crappy section of I-70 in Colorado. I had them straightened and installed Granatelli adjustable rear Toe Rods so I could get the rear camber down to -.05. That took a lot of the stress off of the inner part of the tire and wheel. 6 years later and no bent or cracked wheels.
I just picked up a '19 GS M7 1LT non Z07 with 8K mi in May....LOVE the car and no regrets. I'm like you not wanting the Z07 package due to replacement rotor prices and I won't see the benefit of the CCB. I came from 2003 C5Z set up for autocross with a cam/full exhaust/coilovers/bushings and the C7 does everything better.
IMO if you drive A LOT I would plan for new wheels just for the piece of mind if a stock wheel cracks.
Maybe keep an eye on the stock tensioner which seem to be a common failure.
At 15k mi....not too many things to worry about
