I'm gonna have my Z in and around Las Vegas for most of January and from what I understand the highest octane rating for premium that area offers is 91. Is that going to be an issue
for these Z06's? Probably a stupid question, but thought I would ask anyway. I know they have some Rebel stations out there with 100+ octane, would an octane that high actually work well with these
cars? Thanks in advance for your input.

There are a couple ARCO/Rebel stations in my area that sell the 100 octane race fuel. It is expensive stuff, at just under $8/gallon. And not all Rebel stations carry it.
I buy a blend of 100 octane and 91 octane.
I try to keep my tank's average octane around 95 or so, so I shoot for a 1 to 1 ratio.
A 1 to 2 ratio is 94 octane; a 1 to 3 ratio is just over 93 octane.

I use 91 and it works fine out here as long as you’re not tracking it.

Which stations carry 100 octane? I was told it isn’t available in town.

Filled her up just a few hours ago! Put in 4 gallons of 100 and the rest 91. Seems to be a pretty good mix. Now if only I didn't live in Spring Valley. Oh well. Guess I'll have to drive her 20 minutes one way each time I need to fill up!

The Rebel gas station at Lake Mead and Torrey Pines used to carry 100 octane race gas and still may, but, I haven't been by that station in some time.
Your engines octane requirements go down as your elevation goes up. Generally, if the Premium they sell in your area is 91, then that’s all you need in that area. If you fill up with 91 and then drive to a lower elevation location, then you might need to address it.

Very true.
With a boosted engine, I like having a few additional octane points. It's an OCD thing....
I took mine to the dyno bone stock out here in CA with **** 91 fuel, made a few pulls, then added Torco Accelerator while still strapped down, gave it 7 or 8 min to circulate, then made a few more pulls, picked up NICELY!!
Now it did not make more then the average C7 Z makes bone stock on a factory tune, but before the torco, I was off more then 50 HP...
I'm now tuned on it with my bolt ons, runs quite nice!
I live in vegas and have a 17 zo6 I run Chevon 91 all the time no problems

, assuming OP is running a stock tune. Those running an aftermarket-tune that calls for higher octane should consult with their tuner.

91 is the highest you can find in CommieFornia, except at some track locations or race shops. Been that way for years. Thanks CARB.
I've had no issues with my Z06. I'm sure there is probably some power reduction from the computer but not than I can notice.
