Bought new 21” wheels for rear and put 325-30/21 on
the wheel sticks out further than the tires does. It is driving me crazy, the fronts are 20” and tired are flush like they should be. The 325’s are the same size I had before but I had continental extremes, wonder if it is the tire manufacturer?
Do you mean the tire is stretched on the wheel? If that’s the case maybe your new wheel is wider than your last and needs a 335 or 345 to be square with the wheel.
Or, yes…some tires although the same size on paper could and do have different tread widths depending on manufacturer.
The stock 20" rear wheel is 12" wide. How wide are your new 21s?
As mentioned above the stock 335/25-20 rear tires are 10mm wider than your 325/30-21 tires. And of course, the 325/30-21 will be a good inch taller than the stock tire. Nothing to do with the tire manufacturer, It's the wrong size tire in a couple of ways.
I have not mounted these yet, so offset is not a concern right now. I am more worried about how the tire looks like it does not fit the wheel. The tire is not flush with the wheel face, it sits back about an inch from the face of the wheel, see pics I added.

Michelin shows that the 325/30/21 that you have has a tread width of 11.2 inches.
Michelin shows tha the 345/25/21 has a tread width of 13.4 inches. 2.2 additional inches of tread should square things up. Then the only question is whether it will fit in the wheel well with a full suspension stroke.
The stock tire 335/25/20 has a 12.6 inch tread width and a diameter of 26.6. The 345/25/21 has a diameter of 27.8.
