Missing some information here are you running stock tires or aftermarket? What do you consider "good performance"?
If running stock tires I also find it hard to believe the major tire websites do not have inventory in your size
Curious cant find anyone that has good performance tires (sizes) that fit my 2016 Z06 Corvette, any help?
Define what you mean by performance tires. There is a wide range of performance tires, some are good on a road course, while others are best on the street and others are best on a drag strip. The best street performance tires for my Z06, I have found, are the stock Michelin PSS ZPs. They work well on the street, don't do too badly on the track and wear much longer than the Cup 2s.
Stock Michelins are great but also seem to be difficult to find at times and are expensive. I went with the Continental Extreme contact sport 02, cheaper and stock sizes. Still a summer performance tire.

Wanting some good street?drag tires to perform, like R888 Toyo or Nitto but dont have in my size?

You are going to need to go outside of stock specs a little bit. There are plenty of combinations that have been shown to work with both Nitto and Toyo, which are what I would say are your best two choices for a performance tire outside of Michelin. For example, I have 295/30/19 Michelin PS4S front, 345/30/19 Nitto 555R2 in the rear. This setup works very well for straight line applications and can still handle corners decently. You can also run the same size R888R out back. Personal preference, I've had R888R and I much rather the Nitto. You can also run a 285/30/19 MPS4S in the front and 325/25/20 MPS4S in the rear. Plenty of options especially if you drop down to an 18/19 wheel in the rear.

I recently got Toyo Proxes Sport tires. I up sized with 295/30-19's front and 345/25-20's rear on the stock wheels. I really like the fitment and don't have any rubbing even being lowered on the stock jacking bolts.
