At one point I was able to select two-tone option on a GT1 seat with 2LT trim level. Now it won't let me. Did I possibly have some other option selected that allowed me to do this?

The Order Guide is very clear that two-tone seats are only available with GT2 seats and either 2LT or 3LT. With 2LT, two-tone is available with Sky Cool Gray, Adrenaline Red, and Natural. There have been, and probably still are, differences between the visualizer and the dealer Order Guide.
