I assume you have the VIN. You can tell when it should be built from this thread: 2021 C8J Production Spreadsheet. Go to the end of the thread and then scroll up to the spreadsheet image that shows VIN ranges produced each day (week). As for shipping, it will likely ship anywhere from a couple of days to a couple of weeks after it is built. How long it takes is greatly influenced by where it is shipping to. The western half of the US goes by a combination of truck and rail which can add weeks to the delivery process.
