@AbsolutHank this is freakin gorgeous. So I’ve ordered the collars but now contemplating also ordering the @ParagonPerf-Graham springs for a bigger drop. I’m only going 255 in the fronts and 325 in the rear 20/21 setup.
Just to confirm, you don’t have any issues with rubbing correct? If not, your setup has made up my mind about getting the springs!

does this car have lowering springs and lowered factory height or just the lowering springs?
Just from an asthetic standpoint, I think that the combination looks ugly. Too much wheel and not enough tire. And there is the issue of tire availability and the problem of increased risk to tire/wheel damage from pot holes and a rougher ride.
Strasse SM5RT Deep Concave FS 20/21 custom. 245/30/20 front and 325/25/21 rears. Stock height. Rides and handles the same. The ride got more comfortable due to not running runflats anymore. No rubbing or any issues whatsoever.
Looks great! Do you feel like there is more understeer? You've added 40mm of rubber in the back, and technically decreased the contact patch up front (even assuming same overall circumference bc sidewalls). Maybe that's just stuff track- rats say tho

So I went a different route. I have 20x9 fronts and 21x12 rears, however, I have 255/35/20 fronts and 325/30/21 rears. I have the FE1 suspension so no ability to lower unless I purchase aftermarket lowering springs, which I didn't want to do. I did the math and the higher profile tires fill the gap perfectly and take care of the issue you mention, too much wheel and not enough tire. No issues at all.......there is a small difference in actual speed compared to indicated speed, but the ratio is essentially the same as stock so no issues with traction control or anything like that.

The rear tires are going to have 38 fewer revolutions per mile than stock (+5.5% circumference). I ran a 1" smaller tire in the past and my speedo was off by 4-5 mph at around 70 (based on GPS speed). But like you, no other noticable changes (besides being lower).

SemiFighter18's car is .6" taller in the front and .75" taller in the rear. Talking about going the wrong direction!
