It has to do with the ECU retarding the timing briefly during shifts to prevent loading on gears.
This creates delayed combustion and you might hear a pop as the exhaust valve opens or when unburnt fuel vapor reaches the exhaust manifold where it "explodes".
It's the opposite of JerryU's "Rev Match Music". Maybe you can call this "Pop and Go Go Go!!!"
Btw, some people with programmable ECU's actually put tunes on their cars to attempt to increase this noise. There is a teenager where I live that I can hear racing up and down the boulevard most evenings and his popping is beyond obnoxious. He probably has it combined with a flame throwing pineapple shooter exhaust and cat delete.
