I went with the XLs as the HRE’s are flush with the fenders. These are Carbon Flash from Extreme Online and were $249 for a full set (front and back). I purchased them back in February after I found my C8…..seems they have upped the price a bit since then.
I put mine on last night - took about 30 minutes... The tough part was when I removed the originals from the car, almost all the clips stayed on the car
I used a small set of forceps to pull/pry them out

Same thing happened to me it was like they were glued in in fact I cracked one of the sots in the front fender getting one of them out. The plastic pry tool was almost useless.
When I swapped them on my 2020 they were much easier to remove. As for those huge wide ones above I'm not sure I like the look.
Can someone educate me about why I need splash guards or XL splash guards?
I live in NE and never had splash guards on any of my cars….1966 on. I have never had any issue. However, I have never owned a Corvette. Is it because it is so low and what am I protecting against?
They never required but the tires on the C8 do extend beyond the lower body lines so you're going to get a lot of debris hitting the lower panels. It's really cheap insurance to reduce that paint damage and they don't look bad on the C8.

I'm satisfied with the protection the OEM splash guards provide. The XL splash guards will provide more protection but I prefer the more inconspicuous look of the OEM guards.
I saw from one GM supplier that the splash guards may be in stock at the end of January so I've been checking out the ones on the Bay.
There are about 5 or so selling, from China, and in the same price range of about $120. It's tempting especially since the OP said the quality was good.
Hmmm... decisions??
I used ACS. Same as GM. Easy but a few clips had to be pulled, straightened and reused. I think they are needed to keep the paint from being sand blasted.
These are close-ups so they seem a little more pronounced (especially on the front) but as you can see in the last pic, they are hardly noticeable unless you are really looking hard.
ACS btw and a little longer tail on the bottom helping to keep rocks from throwing out against the paint so I feel they are certainly warranted regardless of the brand.
