"With the transmission in D (Drive), pull the right + paddle or the left − paddle to place the transmission in Temporary Manual Paddle Shift mode."
"To cause the transmission to downshift to the lowest gear possible for the vehicle speed, in Manual Paddle Shift or Temporary Manual Paddle Shift mode:
Pull and briefly hold the − paddle. If the paddle continues to be held as the vehicle slows, downshifts will continue as vehicle speed allows."
"When in Temporary Manual Paddle Shift mode, the transmission will automatically upshift if the accelerator pedal is pressed all the way to the floor."
Suggest that you experiment with your C8's Temporary M mode some more to verify that your C8 is working as described in the Owners Manual, otherwise a Dealer Service visit might be needed.

@Kracka - Interesting and thanks for sharing. Our 2020 C8's Transaxle Temporary M mode works as described in the 2020 C8 Owners Manual (page 174) as follows:

Shortly after merging I turn onto another rural road. In Z Mode I would be in 4th or 5th gear on the highway and when I brake for the turn it would downshift to 3rd. In My Mode it may be in 7th gear and when I apply the brakes and turn it will not be in as low a gear as desired, so I pull the downshift paddle, perhaps several times.
Where in Z Mode if I am not using a lot of throttle, it will upshift itself soon after turning. In My Mode having pulled a paddle it WILL NOT upshift for ~10 seconds. So it's stuck in that lower gear, say 3rd and I'm just casually going to 60 mph. Have to remember I must pull the upshift paddle even with modest throttle.

@R & K C8 I did some testing on my way home from work tonight all all appears to be functioning as the manual describes. Thanks! And now... 
These C8's are rather complex automobiles and it takes a while to learn about, experience and then remember all of their standard features and adjustments.
