When a dealer submits at DSOP (like they did last week,) when does GM move orders to accepted? Just trying to figure out since my dealership put it in the system weeks ago and I track status via the Chevrolet chat bot.

If your dealer matched your order with an actual allocation it should have gone in that Thursdays DSOP. Two days later it should have gone to event code 2000 which indicates the order was accepted from Chevrolet. The next step might take some time and that would be event 3000 meaning your car has been accepted by production control. Once it get to 3000 normally that means you will eventually get a car unless there is a strike tornado or unforseen parts problem etc.
Most 2023 that went to 2000 are already at 3000. I have seen people stuck at event code 1100 for months if not years. These are preorders that are not matched with allocations.
Most dealers have learned the hard way, and won't do preorders because all it does is raises the expectations of the customers and then they keep calling the dealer about the status.
I know 1 large dealer that entered all their orders for 2020 C8 as they came in. Many of those cars did not get produced the first year and didn't get an actual allocation for almost two years. They were stuck at event 1100 all that time.
Orders typically go from 2000 on the Saturday of the consensus to 3000 the following Wednesday. It's pretty automatic, unless there are unusual conditions. It's going from 3000 to 3300 (Scheduled for production) that can't be predicted, and can take quite a while.

I am ordering a Z51 with FE4 so know they also have to have an allocation to match to. Since they normally have at least 11-12 allocations per month, figure they must have at least received a few.

Not necessarily. FE4 seems like it’s heavily constrained right now.
