When in storage for 7 months, does anyone fire up the Vette for 5-10 minutes. move through forward and reverse, park slightly forward/back once a month or so?

Worst thing you can do to a stored car. Unless you run it long enough to get all the fluids and exhaust system hot, all you're doing is letting water condense in the oil and exhaust. Park it, cover it if you want to, plug it in to a float charger, and don't touch it until you're ready to take it for a drive.

I fire up the Healey once a month, but don't do the other "exercises". Been doing that for nearly 25 years of ownership.
After reading post #3 I am editing to say I run it for at least 15 minutes to make sure everything gets warmed up. Seals in these old cars can dry out if they're not run for long periods.

I would only start the car up if I were going to take it for a drive long enough to get it up to temp for a while.

I only store mine four to five months but I never start it. I keep it covered the whole time and don't do anything to it.
I first run some sta-bil through the fuel system, wash and dry the car thoroughly. I then hook up the battery charger, put on the soft cover then zip it up in my Carjacket not to be opened till spring.
I have always done it this way and the results have been excellent. The car looks exactly the way I put it away and starts up like I had been driving it all winter.
