The 1LT GT1 seats do not have adjustable bolsters. The 2LT GT1 and GT2 seats have the same adjustability and are in my experience very similar in feel, mostly different looks. I ended up choosing the GT1 seats on 2LT.
Is there a difference in the comfort level between the gt1 and the gt2 seats?
The bolstering on the GT2 seats is about a inch more. I am not thick enough in upper body for any of the extra touch my body. So it makes no difference.
GT2 seats have adjustable bolsters, but I Ieave them on the widest setting all of the time. If your back is not as wide, maybe the adjustment would be good. I don't use it at all.
The GT2 seats have Napa (real) leather seating surfaces and dual-density foam. The GT1 seats have Mulan (bonded) leather. Personally, I wouldn't let the leather drive the decision. All else being equal the dual-density foam has the potential for better comfort but how well you fit in the seat is the overriding factor.
The GT2 seats only have NAPA on the inserts. The bolsters are "Mulan leather" on both GT1 and GT2. Unless you order the microfiber inserts, in which case there's no Napa on either of them.

The adjustments are related to trim level, not seat type. On a 2LT both the GT1 and GT1 have adjustable bolsters and lumbar, heaters and ventilation. Only the 1LT lacks those features.
Also anybody not happy with the gt2 seats and wish they would have gotten gt1?
Also- which seat is closest to the c7 gt seats? I absolutely loved those seats in my 2017,..anybody know?
I have the GT2 seats and once I got them dialed in found them ALMOST as comfortable as the C7 GT seats. The difference was that the GT2 seats felt harder than the C7's. But that may be because my C7 had 36,000 miles on the driver's seat, the C8 was brand new. I find them very comfortable for long trips. I've done a couple of 12 hour days with stops only for a quick lunch, dinner, and bathroom breaks. I've sat in the GT1 seats, and they felt fine to me. Maybe slightly softer, but not much difference. But without putting a long day in on the GT1s, I really can't compare.
I have experience with all three seats. As @Kevin A Jones suggests, if you can, you should try to sit in each seat to determine which seat is right for you. Granted, being able to sit in each seat is still a bit of a challenge unless you know owners who have each seat or a dealership allows you to sit in one assuming they actually have cars with each seat on hand. Not many dealerships have C8s in stock, but it’s a better situation now than it was in 2022 when I bought my car. I was lucky to be able to sit in competition seats before my order was accepted and I was able to change my order to GT2 seats.
Here is my opinionated, personal take on which seat is best:
-GT1 seats are fine for most any body shape and are comfortable. Not the seat you necessarily want if you plan to put the car on the track as they are a lot less bolstered than the GT2 or competition seats. Not a drawback if the car is only ever going to be used as a street car or GT cruiser.
-GT2 seats, which I have and live with everyday, are a perfect blend of comfort and bolstering and are just as comfortable as the GT1 seats. Some, including myself, think they are even more comfortable than the GT1 seats. To me, the GT2 seats look better than the GT1 seats (if you care about aesthetics). That’s my subjective opinion. My objective opinion is that I think this seat is the happy medium between the GT1 and competition seats. I’m built like Emmitt Smith and I’m comfortable in this seat.
-Competition seats. Don’t believe the hype about how uncomfortable these seats are. They have as much padding as the other seats and are the best looking ones out of the three. However, these seats are heavily bolstered and hold you quite tightly. The “discomfort” of these seats is due to the bolstering and whether or not you will be uncomfortable in them depends greatly upon your body type. I fit in these seats just fine, but not everyone will want to live with these seats on a long road trip or even in around town, daily driving. These seats are truly optimized for competitive driving and a prospective C8 buyer should keep this in mind when considering what seat to buy. That said, don’t let the naysayers dictate your decision to go with these seats based solely on the comfort factor. However, if you will never put your car on the track, you really don’t need the competition seats.
That’s my take. As objective as I can be.
Here is some additional perspective based on my experience:
1. I found the GT2 seats to be fine on the track. I went to Ron Fellows Driving School and the instructors told us to fasten the seat belt, then move the seat forward. That worked to keep me held in the seat on the track. I never noticed myself sliding around on the seat.
2. I have the competition sport seats. My wife and I find them very comfortable, even on long trips. After coming home from Ron Fellows and driving in the GT2 seat, I did notice the lower seat bolsters on my competition sport seats when getting out of my car, more than I had before Ron Fellows. That went away after a week or so and then it felt normal again. That being said, the GT2 seats do make it a bit easier to get out of the car.
3. I like the looks of the competition sport seats the best, which is the primary reason I chose them for my car. Aesthetics are subjective, though.
