What drive Mode? Expect because you gave it full throttle it is waiting for your next aggressive drive command and is holding for you to accelerate more or after a corner. I know in Z-Mode where I often dive that is the case.
Very normal as others have said, she thinks you want to play. If it bothers you just pull the + paddle and it will shift immediately to a higher gear and settle down, otherwise it will settle down after 4 or 5 seconds.
"Driver Influenced Gear Selection", "Performance Transmission", and "Performance Shift" - it explains the features that are related to what you are experiencing, the conditions that trigger it, and how it affects the shifting and gear selection. Depending on the display theme you are using, there is even a light on the DIC that indicates when the feature is active. It is discussed in several place in the manual, which is why I suggest a search for the terms.
Same\Normal. Mine does the same. So I just hit the shift-up button.
Makes sense to me. The car logic thinks you want to stay in aggressive drive mode and is ready to do more, continue.
I have MyMode set to sport. I now need to test in Tour Mode which I believe it will still hold the lower gear even after letting off the throttle.

When I drive in My Mode, set to Sport, I'm in traffic in town etc., it never does what the OP and most others describe. BUT when I drive in that mode I'm not driving aggressively where I use Z-Mode. It's all controlled by my right foot.
FWIW, reminds me of my wife who drives conservatively. BUT when see takes off from a stop she uses a lot of throttle. Her BMW Turbo 6 SUV is accelerating more like how my C8 does in Z-Mode Power set to Track (purposely as that is what I elect to do.) But it shifts quickly to 2nd. If she drove my C8 (in 3 1/2 years never has, never drove my 5 prior Vettes and will not want to drive my E-Ray -her choice) but expect she would find it held 1st gear too long. Wonder if that is part of the reason when I suggest driving in Z-Mode with Power/Trans set to Track folks say it holds in low gears too long. It is very right foot dependent.
A member made this video showing why he only uses Z-Mode. For those who don't like V4 it also avoids ever going into that Mode. If you have MRC, can set Ride independently wherever you like, such as Tour. If not, has no effect on ride. You'll see in most of the video he is NOT driving aggressively and car is shifting at low rpm.
Driver Influenced Gear Selection is Effective In All Modes
Per the Manual, and simply put:
"Driver Influenced Gear Selection will influence both the upshift points and downshift points in all modes. When engaged the Performance Transmission Active light displays" [Note, I think that Performance Transmission Active light is only present on certain DIC display themes]........."Driver influenced changes are effective in all modes, however the aggressiveness of the transmission response will increase between Tour, Sport, and Track modes respectively."
In this context, the "modes" refers to the Driver Modes. But, it would also apply to the engine/shift setting (Tour, Sport, and Track) in Z-mode as well. That is, Z-Mode, when Performance Transmission is active, the response will increase between Tour, Sport, and Track settings of engine/shift.
Perfectly normal..... as stated before the Car assumes since you stepped on it
it needs to continue the aggressive acceleration/shifts.
Easy fix ...... just paddle shift up a couple of gears.
It will lower the rpm's and switch back into Drive mode after a few seconds.

It isn't an issue - the car was designed to operate this way and it doesn't hurt anything. As mentioned, you can use the paddle to shift into the next gear or so if it isn't doing it as quickly as you want.

Since my C8 Z51 did not do that when in MY Mode (set to Sport) suspect your issue has more to do with your right foot! Try using less throttle when you take off from a stop. Maybe whoever had the car before you had a heavy right foot. It may need to learn that is not how you drive?
In addition, the C8 has a very numerically high dif. Combined with the 1st gear ration torque multiplication is 15:1. Those are for my Z51 but the Base is similar. Compared to my standard shift C7 Grand Sport where combined 1st gear was 10:1. It hit redline at ~50 mph in 1st gear. The C8 hits redline in 1st at ~34 mph.
Yep that 60% rear weight allows higher torque multiplication in 1st. Feels more responsive BEAUSE IT IS!

Sorry for the stupid question but I just got the car and am learning as I go. Input from others is the best way to get info.

The paddles work no matter the mode selected. .. They are also fail-safe. That is you cannot shift into a higher gear if the engine would lug, nor can you downshift to a lower gear if it cause an over rev. .. Also, be aware that once you use the paddles, the car will be in manual mode for a number of seconds. .... EXCEPT if you are headed down a steep grade. In that case if you have selected a lower gear, it will hold that gear for as long as you are driving down that hill.
