I have a z51 with the summer tires and I plan on replacing them in a few months. I am considering the all season Michelin that are stock on non-z51 equipped cars.
Recomendations?

I have the same set up and will be in the same boat… I like the Z51 Summer only high performance tires but I don’t drive anywhere near the limits of these tires…. Having all season performance tires theoretically extends my driving season.
My AMG has AWD, one of the reasons I bought it. AWD is all weather to me but my car came new with high performance Summer only tires 🤷♂️. Which doesn’t make sense to me…. And they scrub terribly when the temperature drops. Never had a scrubbing issue like this. They are also run flat so they have a stiff side wall… Good all seasons remain flexible at cold temperatures even if they give up some at the limit capability.
There are lots of good tires available…. Continental, Pirelli, Bridgestone, Goodyear…. My son has a set of Generals (bargain performance brand the M3 forums sort of adopted) on his E46 Coupe and they are great.
I’m not sure who makes the right size in the right category for our C8’s…I always remember my Road & Track tire guidelines that tires are half your ride, handling, stopping… you always want the best tires you can afford and 99 times out of a 100 I’m happy with the best Michelins I can find…. The tires that scrub badly on my AMG are Pirellis and I won’t buy those again….
I'm swapping to Michelin AS4s come October here in SC....had them on my c7 and m4, always loved them and best all year driving tire. I have no desire to switch tires two times a year or I would do something different.
I swapped out my summer tires on our Z51 for the Michelin A/S tires when our car was only a couple months old and sold the summer tires. I run the A/S year round, including nice days here in PA in the dead of winter. NO issues, great tires.

Unless you are looking for something other than all-season Michelins on the non-Z51-equipped Stingrays, I would get the all-season Michelins. I did that when my summer max tires on my Z51 Stingray wore down enough to justify changing them out.
That said, Tire Rack usually has a variety of alternative brands if you search for other tire options, there, though I think the tire options for the C8 are somewhat limited compared to previous Corvette generations.

Actually now there are 35 options for the OEM sizes on Tire Rack.

Did the Michelin A/S ride softer than the summer tires? They look very similar.
Continental offers an all season but I cannot tell if they are RF ( I prefer to stay with a RF).
I like the goodyears and coopers for my other vehicles but I have not seen an offering from either for the C8.

My wife’s observation is the Michelin A/S is way smoother. She said why didn’t you change those out sooner! Sam
I would say stick with one of the OEM tires. I went from the all season to the summer tire (Florida so only 1 season) and both for daily use perform to higher limits than you need. I got the PS4S for the occasional autocross weekend.
To get any tire other than 1 of the 2 OEM tires you are going to lose run-flat. I have had several nails and went with the OEM PS4S tires so I would not be stranded.
If you get a nail in the rear not every shop will be willing to unmount and patch a 305/30/20. I know several shops I called were not willing to work on the car when I got my first nail. Not sure where you live but that could mean you could potentially have to flat bed the car for a nail.
On my C7 I moved from Mich to Continentals due to Mich supplier issues. I will say the Continentals were quieter and had better traction, albeit they were not RF. Like most cars, I carried a fix it kit and also have AAA, so I figured I was covered.

Can't beat Michelin who have done a great job compared to the Goodyears in my C6 and prior Vettes.
BTW, stop remembering OLD info! Run Flats are not much different than non, re ride softness and sound. Summer tires do a great job down to 40F. If you drive often when below 40F than AS are useful. But old ideas are just that OLD.
BTW as Tadge said they did not need to use race car tire construction with the C8 as they did for the C7 (particularly the Z51.) The C7s had a lot of what GM called Chatter or Hopping when below ~45F and making full lock low speed turns. The C8 has much less and even none down to ~45F.
Do agree, where I hesitated to drive my 6 prior Vettes in the rain because of poor handling NO ISUUE with my AWD E-Ray in pouring rain!
