Today, drove my 2021 C8 Convertible to a business. Shut it off; self locked-no issues. 2 hours later, battery dead. Roadside Assistance jumped it. Dealership says during an OTA (over the air) update, the update got "stuck" and drained the battery. Tech "cleared" the message and all good. Just fyi.
just remember when you completely flatten and drain a battery, the battery may not be the same, it may have long-term damaged it. You may be set for a “spontaneous battery failure” sometime in the future.

Not sure the battery was flattened. It "jumped" quickly and restarted at the dealership quickly. I think the stalled update essentially froze the system. Thanks for the heads up.

Prior to "shutting off" the car, did you receive a notice of a pending update and did you approve the update? That how it is supposed to work. And then you get something that says to shut off the car. Also, was it the original battery? And, since the battery was dead, I assume you had to use the manual method to open the door, then access the manual frunk release so that RA could jump ti?

Car would not turn over although interior systems worked. Given the quick start I'm not sure the battery was totally drained. More like locked up. Frunk and trunk opened with the fob. Radio, interior systems all worked. Just wouldn't crank, not one turn.

You can look at your update history in the infotainment system. Does it show an update? I suppose even if there was one, it would have failed - that's the MO for the the updates that run the battery down. But, we have not heard about them much any more. Given that you did not approve one, I am skeptical about the tech's explanation. How did he determine it was due to an OTA?

After reading OTA SW update killing battery I had the update done today. It pays to be proactive!
I also have a 2021 HTC, my info screen says no updates for it. I bought it used in April, the dealership updated something before I picked it up. I have not got any notices since owning. I would also replace that battery.
FYI - Just received an email from Chevrolet telling me to bring my '23 to the dealership for a software update that can only be performed at the dealership. Not sure if this applies to pre-2023 but you may get notified.

Gone are the days when my battery died I would push the car with the drivers door open, jump in once moving, pop the clutch, and drive away. C8 has too many systems dependent on proper battery function/voltage so Id replace your battery and not take the risk of possible future issues.
I haven't seen a software update for my 2022 in more than a year. I don't think the 2020-2023's get OTA's anymore. I'm betting your problem was something else and the tech was telling you a story.
There is a active recall out about this exact issue, I just went to the dealership yesterday to get a software update to prevent this,,, (It took about 2 hours)

Yes, but that recall only pertains to 2023's. The OP said he has a 2021.
