2023 C8 and about 50% of the time I start the car I get no device found for apple car play. Phone is updated, etc. just getting frustrated with having to stop and restart car to get Apple Car Play to start.
I don't have the exact screens handy, but go to the settings in the infotainment for "Phone". From there you can select to disconnect the phone and reconnect it right away without re-pairing it to Bluetooth. When it happens to me, I'm usually done with that process as I'm backing out of the garage. No engine restart necessary.
Your car's trying to tell you that Apple Car Play isn't necessary to drive your Vette.
LOL…my first probably 6 months of my 2023 I didnt listen to anything other than that sweet engine…but my wife wife got tired of that and we had trouble syncing also before she died,
It’s much worse since the “have to go to the Chevy service dept for the code upgrade. Now it almost every day is having issues with syncing the AppleTunes as well as on the HUD the Local Speed at location anymore.
I got a good connect by making sure that I am wired directly to the USB from my Apple phone in the center console , the phone is on and not in sleep mode. So then I start the car, and always get a Apple CarPlay connect. Wireless carplay was hit or miss for me, and it’s just as easy to connect with cable through the center USB.

Same issue and worse after the “update” that required the dealership to do the update recently. Havent really talked to them about the issue but annoying to remove the phone and start over. That fixes for a while…this is for AirPlay…dont know about Android.
(a) never used the internal USB port
(b) for a long time, I agree…I NEVER turned any radio or sound on and just listened to the engine and loved it…which I still do when this problem occurs most of the time…love the car.
All phone issues can be resolved by resetting the phone. iPhone reset. Make sure screen is off, bring the screen alive and hold the side right button and side top left unit the phone resets and the screen turns black, keep holding until the apple comes up and release all buttons. This resets the phone, this should be done once a month and the phone should be shut down every week as well and turned back on.
I don't mind this feature so long as there are no reliability issues, doesn't materially increase the cost of the car, and there's a way to permanently disable it rather than having to turn it off each time you drive.
