I don't know squat about Apple stuff, strictly Android. Also, you don't mention the year of your car, and I know it's changed since I got my car so the the 2024s (I think) don't have native nav, only Google....
All that said, in my 2021, Once Google Maps or Waze in started, the only way I've found to turn it off is to turn off the car. No amount of button pushing, either on the phone or the car itself will cancel. Once the car is off, turn if off on the phone too. Only then have I been able to start fresh using only the car's native nav.

I use a CarPlay AI box to run Google Maps on the infotainment screen (among other things). If I want to cancel navigation I do a long press on the Talk button and say "Cancel Navigation" which works. There is also a box on the left side when using Maps that has an X on the upper left of the box. Pressing the X cancels navigation.
A long push will access your phone's navigation if you are using it and short press will access your cars navigation if you are using it. At least on my cars.

Yes, but then you'll get directions from both the cars native nav AND Google/Waze. Sometimes from all three. .. .and you can't shut off two of them without turning off the car as above.

I've used my Carplay for the music and the car's nav for direction and haven't had any problems.
