I don't think I've seen them listed for sale anywhere. I would venture to guess that they do not have any of the features of the stock mirrors, and will provide more wind-noise, due to the design. You might be able to find something on Ebay or AliExpress.
Since I'm not seeing any aftermarket C8 mirrors (just cosmetic mods), your best bet might be to just have those removed entirely (block-off plates bolted onto the mount location), and see if you can mount some motorcycle mirrors directly onto the a-pillars. Jeep Wrangler owners sometimes do something similar when they take the doors off.
Alternatively you could see if you can get a blockoff plate with a 10mm threaded socket on it...which would allow you to screw-in the standard-threaded, universal-size motorcycle mirrors of your choosing--onto that location.
You might be able to get a piece like this, fab it up with bolted-on ATV/UTV/motorcycle mirrors--and then attach it with heavy-duty velcro (for temporary use) or heavy-duty adhesive (for permanent attachment).
and for all the " rules followers" they won't be DOT legal.
I don't think there's any mandates regarding side mirrors on passenger cars--other than they have to exist. Can't use exclusively cameras. AFAIK, turn markers, blind spot warnings, etc--are all fluff and not mandated by law.

There are side mirror regulations, although none include turn makers and such as you rightfully pointed out. They do however require certain, very specific field of view for both x and y planes and also are required to be adjustable by the driver. No idea of the GT3 car meets any of those regulations (seems unlikely to be adjustable). Almost certain no one is going to get a ticket for the mirror, but c5rac1 does have a point that they might not technically be legal for road use.
