The car has a feature called hill assist which automatically applies the brakes on a slope to keep from rolling backwards. When enough throttle is applied the brakes will release, that is what you are feeling.

What you describe is normal. Its the Hill Start Assist feature and you can read about it in your manual. On inclines the car will apply the brake automatically to prevent rollback (or roll forward) when your foot moves from the brake pedal to the gas pedal. When you apply throttle pressure, the brake releases, but the transition is not perfectly smooth, and you feel a slight jerk when that happens.
Although your manual describes the feature, it fails to tell you about the "bump", but everyone has it.

When you say the same issue, are the circumstances identical, less the incline? That is, you are moving then stop, put the car in park, then put it in gear, and then start to move forward and get a bump as the car starts to move? But, on perfectly flat ground?

My issue occurs when just leaving a location like a parking spot or pulling away from a gas pump at 1-2 mph , then letting of the pedal completely. The clunk happens when reapplying the throttle.

Yeah....I think that's a different issue, if you are still coasting. The hill hold feature (which think was the OP issue, and normal) will only engage when the car is at a full stop. After its moving forward it wont engage. But still an issue. I rarely if ever get any unexpected clunks.
When that Ebrake locks, it takes a little bit of movement to release it. It surprises me sometimes when I don't realize it is set, and then it is a little jerky when it releases.
I always remind myself; this is a manual transmission, there is no torque convertor to cushion every move. That kind of explains everything.
