On the conservative side of engineering
Some of the observations of early cars having a lot of under-steer, the cars being too heavy, etc are the result of conservative engineering to try and avoid any radical mistakes. As the models and versions evolve and experience is gained I believe you'll see the engineers cutting out some of the margins they deliberately put in and get closer to their optimum.
None of this applies to styling, just good sound engineering of an initial product that varies from GM's experience base.
