You don't have to eliminate parking brakes with Z06 brakes. That's just a cost saving hack some preferred to do. In fact, I'd want parking brakes to make sure the transmission doesn't rock back and forth when I trailer-tow the car.
You can buy the Z06 ebrake calipers, and they'll bolt right on. If I decided to not use 18" wheels, I'd definitely go this route. You need aftermarket calipers for 18" wheels at the rear...

I haven't checked myself, but heard that fronts barely clear. The rears should be OK. You can check with Apex, too, in case they know and/or verified.
