I have a 2021 C8 daily driver non Z51 but with Mag Ride and performance exhaust. I've got 22k on it and will need to replace the tires after my upcoming 2k mile road trip. I've been happy with the OEM Michelin All Season tires but am looking at other options to improve the ride and tire noise (and maybe shave a few lbs). Does anyone have feedback on options to consider?
Having gotten a catastrophic blowout on the highway 50 miles from home, and driving it all the way on the run flats with no issues, I will absolutely stick with them.

Ditch the runflats. Go to a 200tw tire, it will be like driving a new car.
The difference is the tire design, not whether or not they are runflats. Modern runflats aren't like the old runflats and tire noise is mainly due to the tread design and compound. Here is a video that compares tires which the only difference is whether or not they are runflats:

Living in Carlsbad would suggest moving away from All Season tires which your car probably arrived with and instead move into a set of Summer tires. Summers use a softer, stickier rubber compound and a tread design with a higher rubber-to-void ratio for better road contact and responsiveness in warm weather.
If your looking to shave unsprung lbs avoid ZP tires which are heavier and as well more expensive than regular tires. Personally, have intentionally replaced ZP tires as soon as possible on my last 3 cars. Sold my last 3 practically new sets of ZP tires. It works better for me to go without any type of fix a flat gunk, instead use a cell phone and AAA card. It's been decades, not years since my last flat.
New to the non-flat tires. Huge improvement over the stock Michelins. For long trips, I’ll suffer the road noise, but when local I’ll just keep the quieter, lighter wheel setup…

Run flats do work. This was on my rental Z06 a few years back. Not realizing how bad it was until the tire shop full it off the car for inspection. My guess was these were the original tires on a 25-30k miles car. Drove on them for almost 25 miles to the nearest tire shop not knowing.
I guess all those previous renters had a blast in that car?
I switched to non run flat on my C6, and it was a lot quieter.
That was 10 years ago and driving without a run flat is a gamble.
My 2023 Z51 is a long way from buying new tires, but when I do it will be Run Flat.
Maybe they make more noise or ride a little rough. It is worth it to know you have that safety factor of never being stranded.
Just takes one errant razorblade to change that, but I'm still with you on that, I'd rather use triple AAA any day than let my car dictate using run flats or that tire goo. I got a flat within three weeks of buying my first corvette, the C8, but I had zero experience with what to expect from a car that claims to be run flat. There is no way in hell I'd ever drive that car with a flat tire, I dont care how safe or good it works, its just like you said, its WAY too easy for me to use my cell phone to call for help, which is exactly what I did.

Right, what's not to like? Lot's of silly juice being consumed.
How willing will you be to take a 2000 mile trip with no spare and no runflats?
Saying use AAA sounds good, but if you're on the side of the road in the middle of nowhere and AAA is going to take 2 or 3 hours to get there, would you rather have a runflat?

Exactly.
I would rather have the ability to get to a tire shop on my own than rely on putting my car on a flat bed. Car hauler I don't mind but on a flatbed, rather not have to if I can avoid it. If you don't have a front lift, and they don't have proper transition to the bed/ramp, say good bye to your aftermarket carbon lip/splitter if you have one. I doubt they would carry around expensive Race Ramp to use that purpose?
That's why I have 2 sets of rires and with liquid tire repair for my regular tires to get to a tire shop locally. On long out of state trips, my oem runflat is going back on.
When the time comes to replace the PS4S ZP's on my car, I am seriously considering going to non ZP PS4S's. For some reason, I would rather have an road side tire inflated with sealant than run flat tires. If I was going on any road trip I would just feel better stashing one of these in the car somewhere;
The sealant wont help you if you have a sidewall puncture, so the ZP's may have an advantage there. The infiltrator + sealant has become the standard "spare" solution in most passenger cars and compact SUV's.
