Just got the Vette out of winter storage and dying to take it for a spin but want to clean it up first. One of the things I would like to do is remove all of the previous coats of dressing that has been applied to the dash. What is the best way to do this?
Depending what that stuff is it can be miserable to get off the dash. The one time I had to deal with it I just started taking the damp towel once done drying the car and would wipe it down after each wash. Eventually the majority of it was off.
I dilute Optimums Powerclean and wipe down the area once or twice as needed. You can then use Einszett Cockpit Premium (no gloss) or 303 Protectant (matte) as nice new protectants.

There was a time when I thought a "glossy" dash and interior looked great. Now I want to go to a more matte finish which is more in line with the new interiors.

I have been recommending Power Clean since I first used it (about 3 1/2 years ago), I'm glad to see others agree. This stuff is amazing, dilute it about 3:1 with water (if you get the gallon, otherwise it is pre-diluted), mist, and wipe clean.
After you clean the dash in this manner, I would mist and wipe with water, just to remove any residual cleaner, and make sure your dash is completely clean.
For an interior protectant its hard to beat 303 Aerospace. Keep clean with Meguiar's Ultimate Quick Detailer (which also has UV protection) and you will keep your interior looking fresh, satin, and well-protected.
