I'm using carnuba paste wax (no polish or cleaners added to the wax).
If I put on 2 or 3 coats will it make it better, worse, or no diff, in terms of the depth of shine?.
When I used to use Zaino products, I found the more coats you put on the better, but then it got to a point where I had to take it all off and start from the beginning-finish was looking hazy, with very little depth.
I want to avoid that with the carnuba--so 1 coat, or 3, or more, at a time?

I believe with carnuba you only need one coat. Others may chime in and correct me but one should be all you need.
The rule of thumb is generally suggested 1-2 coats at best. Anything more is likely just wasted product. Two coats is suggested to assure complete and proper coverage.

The carrier system used in Carnauba wax is solvent, so unless you neutralize it (see layering waxes) with cold distilled water it will remove the preceding coat
As Scott has suggested 2 layer will ensure nothing is missed
