I picked up this towel after watching Tuber- Apex Detail. It's a Luxury Microfiber brand Sucker Jr. It's 16 by 24 and the absorbency is outstanding. It feels a little course to the touch and it's a 1400 GSM twisted loop fiber. I thought the higher the GSM, the softer the towel? Thoughts?

"GSM" is just a measure of density, not softness. In your case, you are using a towel made for drying. The twisted loop fiber style is the same style as floor mops use. It is specifically made for absorbing. I have 350 GSM plush fiber towels that are softer to the touch than some 800 GSM drying towels I have.
A couple of years ago read online about a towel Wal Mart sold. It is purple on one side and gray on the other, size is roughly 25x30. It is ultra plush and thick and the best towel I ever used for drying a car. They cost about $8-9 bucks. Two will dry my wifes Expedition.
This one will easily dry 2 cars without wring out. I like using a smaller towel, this one is 16 by 24. I usually end up touching the ground with the bigger ones.
I've been looking at picking one of those up. Currently I have a few Rag Company Double Twistress towels that have a lower GSM count. Brian from Apex loves the LMF Sucker jr. so I suspect it's going to be a home run. I typically used forced air to dry, but when I can't I use the towels
I've only used it once but really like it. The smaller size makes it so easy to handle. Like I stated earlier, it feels a little course but hopefully it won't scratch my black paint. I always use light pressure when drying anyway. Let us know Loki if ya get it and like it.
