The first mental image I see whenever I read a "Header size" thread is CFI-EFI folding his arms and shaking his head - a la "Mr. T."
I'm sure u have D. Vizards book Gordon as he does have a chart which graphs optimum exh pipe dia with respect to exh port flow (at 28"H2O). If u want send me a PM with your cyl hds exh flow and i'll look it up for u. And for >1.75" dia tubes u will have to build custom manifolds from the flanges. He only mentions 1&3/4" for > 375hp but no mention on the hp/rpm/c.i. limit of a 1&5/8" hdr manifold.
Other improvements are anti-reversion doubled tubes (Walker i think used to sell) & port dams, cross-over tubes, large dia exh pipes, press-wave termination boxes, and of course low press mufflers. Also, Smokey said to locate a low press area under car for exh to exit using a sensitive enough gauge.
So really only u can choose here where ur $$$ will be best spent. As much as u like to compete, go with the 1&3/4".
I looked at a bunch of books from various engine builders. For a 383 making anything over 450 the 1 3/4 tube is highly recomended. I went ahead and ordered a set this past week. Already sold the 1 5/8 headers so I'm commited now.

I don't think you'll regret it a bit. If you lose any torque at all at low RPM it'll be minimal & w/ your 383 you'll have plenty of that anyway.
