My deck is zero,my pistons are -5cc and my heads are 72cc. What is the optimum head gasket thickness for quench?

Assuming you are running steel rods, a standard .041" compressed thickness Felpro 1003 head gasket is what you need. Zero deck clearance means that the top of your pistons, the quench area , is flush with the deck of the block. Your heads have a also have a corresponding flat section above this area. With steel rods, optimium quench is right around .040", so the .041" gasket would give you a .041" quench distance between the flat area of the piston and the flat area of the head.

If you prefer another brand of head gasket, anything thicker than .038" or so would be sufficient, assuming the bore i(4.100", 4.125", 4.166", etc) is appropriate to give you the cc's necessary to maintain your desired CR.

Monty's dead on. You can squeeze steel rodded motors into the .035-.040 range if you really want to get tight.

I have mine at .036.

It's typical in race stuff to get them almost touching.I mean seriously they run them and keep cutting until they start touching and then back off a couple of .000. Gotta be careful with loose bore clearances that allow piston rock etc.

I've heard that using a tighter quench area, why is it less prone to detonation even though the CR is higher?

Fuel atomization, swirl and turbulance creates faster flame travel. So minimal quench creates all of these.

That is why ignition timing doesn't need to continue to advance through to red line. That's also why good modern heads have a lower total advance required.
