Default complete restoration - paint question

My father and I have our 65 396 coupe at my uncles shop about mid way through the restoration process. As far as paint goes, for judging purposes (NCRS, etc), does the car have to be painted in lacquer to maintain its full original state? Are points deducted if it is not? Also if we want to change the color of the exterior and interior different from how the car was originally, but still using correct paint and interior codes of other colors, is there point deductions for this? It doesn't have to BE lacquer, but it has to "appear" like lacquer; if it doesn't "appear" like lacquer, it will get a major deduction. If you change the interior or exterior color from what it was originally, the resulting deductions will be massive.

Thanks. Any recommendations for what paint to use to get the lacquer look? We are having a tough time finding any place that will allow us to spray lacquer.

Single-stage urethane, flattened on the door facings and jambs, and hood gutter; on a convertible you'd also flatten the deck lid gutter, and the underside of the deck lid.
