Casting # question.
Is it possible for a 3963512 block to have a casting date of K27 8?
According to most of the casting number charts available on the internet, 3963512 was produced between 1969-71. How can it have a 1968 casting date?

I think your confusing the production date of a part, with the vehicle model year.
The 512 block was used in 69 model year cars. Production of the 69 Corvette started in September of 68. Any 69 Corvette built in 1968, would have to have parts that were made in 68, and many cars built in 69, can be found with parts made in 68 too.
With 69 production beginning in September 68, the first 3963512 blocks were probably cast in August 68.
A 512 block, dated K278 (November 28, 1968), would have likely have ended up in a 69 Corvette built around December 68 or January 69.

The "P" is for "passenger" - differentiates a standard deck height block from the "tall-deck" truck versions.

according to Chevy by the numbers the block went into production in October '68 so J of '68 would be a very early block
