No. Typically Holley and Rochester carbs were chemically treated with a dichromate finish to get the yellow appearance. IMO you can spot a painted carb (or any other part for that matter) that attempts to mimick this finish.
Eastwood sells carb paint and paint that is meant to imitate the Zinc Dichromate finish, but it won't fool anybody.
There are some outfits out there that will re-dye your carb parts for under $100. I can forward you some names if you'd like.
If you polish it, that will quickly remove whatever protective plating is still left on it, and the bare zinc pot metal will oxidize rapidly and corrode.
