I already know what to do to drive a manual. You take your foot off the gas and step on the clutch and then shift, I just haven't put it into practice. Also when you shift down to go into a corner do you step down on both the brake and clutch to downshift?

I hope you didn't miss the Corvette Spectacular in Los Altos a week ago. There were several C6 ZR1's there.
I'd say being a fairly new driver you should take a driving course before ever trying to drive a ZR1. It's a Helluva lot of car
