It doesn't know what's coming in, so it doesn't know what fuel and timeing to use.
As to whether you should let them put a replacement factory MAP in, or go with an aftermarket, that's best answered by one of the other guys here.

I didn't even know there was an aftermarket MAP sensor....huh...learned something new. I already replaced it with a factory.
