Default Dyno

Were getting our 454 engine rebuilt, and would like to get it dyno'd and tuned once we have it installed in the car again.

First question is, should we break in the engine first, or will it not matter?

Second, I live in Paramus (bergen county) New jersey, and would like to know of any good places that can dyno + tune it (carburated). Anywhere that is not real far (ny,ct,pa, or nj)

Also, the rear-end gearing is 3:36, and seeing that we are rebuilding the engine, and are doing some mods to the car now (bought it few months ago), was wondering if it would be better to get 3.73's or anything else? Main use for the car will be street use, but I will also like to take it to the track and have fun.

Our mechanic is saying about 550 Horses, if that helps.

BTW, I'm a computer guy / student, not a car guy yet, so bear with me with my simple questions / unknown knowledge lol!
