I haven't gotten far enough into mine to say one specific thing. So far I have tackled a bunch of random small tasks and I have to say that I have enjoyed each process for what it is.

Out of what I have done so far I have to say that I really enjoy the refinishing of something old and making it into something new with my own personal touch.

Installing the convertible top because it means the car is finished and I will be driving it the next day.

Doing the fiberglass repairs and painting the car myself. Probably because most people farm this part out.

I should finish a three-year restoration next month and nobody touched the car but me. It's been on my bucket list forever to take an old beater and make it show-worthy, so there have been several truly satisfying moments. For me, I'd have to say there are two things that make me smile every time I see them, even though nobody else will ever notice.
#1 is the front door gap. I replaced the front clip and getting that gap right (along with the rest of the door gaps) was, literally, a month's worth of work. So many times, I was tempted to say "screw it" and just call it good. Then I'd take a deep breath and start over. Now? Perfection.
The other thing would be the chrome trim, bumperettes and grilles in front. The fit was laughable when I started. Off in all six degrees of freedom... I ended up having to break the fiberglass and start from scratch on the chrome surrounds. Then when I went to do the grilles?? Yikes. Again, it was a three week job to get it all to fit right. I finally got it all put together last week and the fitment is a thing of beauty. I've actually gone out into the garage just to look at it.
The satisfaction, for me, is directly proportional to the effort spent overcoming difficulty.
