At a minimum the 2LT stickered for $71,000 new
Would be worth your time to peek the forum dealers prices on brand new since you're already in for that kind of money.
*** Chevrolet in Bradenton Florida just sold a new 2LT 2017 triple black Grand Sport Convertible automatic for 59,000 with yellow calipers, carbon badge kit and performance recorder.

Figure options on your model..subtract a percentage discount on options you feel comfortable with , calculate mileage loss in value and you have your answer...
When you lease any vehicle of any brand most options are depreciated 100 percent over 3 years...I'm not suggesting you follow suit but options depreciate faster not slower than the vehicle...
If I remember correctly new the grand sports were selling at the end of 2017 at 20 percent off msrp new...so now the vehicle is preowned with minimal mileage so go from there to decide a fair price...otherwise buy new or from a private seller...
I think the OP are slightly over paying at the prices you mentioned.

The 8K mileage car has sold.
The wife is now looking at new Stingray's 2-3LT packages.
I really dig the GS though.

Bottom line? I'd buy a new 1LT GS manual for 56,888.
That would be my target...2LT and 3 Lt interior luxury items are not my thing...
Honestly I'd buy a used z06 with mileage but that wasn't your question..(I want something a little different next time so 650 hp would be my choice)
The GS is cool too...
I'd pass on the stingray..the wide body rules..
That I wouldn't let the wifey get a decision on if that's what you want.
The grand sport has been described by the automotive press as truly the sweet spot of the c7 lineup.
Stick to your first decision and check out the forum vendors selling new corvettes...
Their prices and their service...not to mention the entire buying experience can't be beat...
Flying out and driving home is probably one of the best short vacations you will ever have.
It certainly will be a once in a lifetime experience you will always remember...
That's my recommendation...
At 56888 my biddies 1LT grand sport manual will be a purchase he will enjoy for many many years to come..
He doesn't miss any of the luxury items of the 2 Lt....he is a successful dentist whose 9 hour drive home from Detroit was an epic weekend adventure...and his beautiful wife also a dentist only says over and over to me...if she had only known her husband could be so happy she would have bought him a corvette years ago.
He's a successful person, a great father of 3 kids and man if six months later he still has that smile on his face everyday..
You deserve that as well...

(Edit ) my other buddy just sold his ten month old c7 mint condition 2 Lt grand sport automatic A8 in torch red for 52 grand with less than 2 thousand miles on it as he wanted a convertible c7 grand sport as he didn't like the targa removal) he sold it privately and the new buyer of his mint grand sport coupe did the financing at the same convertible c7 grand sport dealer..win win..

Is there a better price on a C7 that's exactly what your want? Only you can answer that.
My goal is always to get the car that's closest to what I want which will continue to make me happy long term at the best price I can.
I see first time C7 buyers who are just 'looking for the best deal' only to fine latter that they wished they had gotten the GS or the Z06 or the Vert and quickly find they hadn't found the 'best deal' after all.
