The increased diameter of the cat tubing accounts for the volume taken up by the honeycomb so the exhaust flow remains constant velocity throughout the entire pipe.
when you hollow it out you have high velocity gas going into a bigger diameter causing a rapid slow down, then immediately followed by a narrowing forcing a rapid speed up
of the gases.
This creates a big turbulent section and backpressure area in there and is WAY worse than just leaving the honeycomb in place.
If you are dying to get rid of them you either need a new X pipe with no cats for cut them out and weld in a matching pipe section
In the 'old days' when converters first came out I had the worst time of keeping all the little 'beads' from falling out thru the big plug on the bottom!!!!
For $270 you can get an EOS x-pipe and keep the original, they sound good. I am not sure what you could do to remove the insides of the secondary CAT's.
It's not performance I'm looking for, but rather a slightly louder sound.
the effort and risk of screwing up the x pipe to smash out that honeycomb won't yield more than a shred of better sound if not outright worse sound
for the flow reasons I mentioned above
if you have access to a welder the cheapest way would be to cut the cats out and weld in straight sections
