I'd still change your coolant thermostat to a 180. It won't change your operating temps but WILL get it there faster. And the faster you can get your oil temps up to the 200+ range the better too, so consider a stat for this system as well. I'm installing a water-cooled oil cooler as much to get the oil temp up faster, as regulating them once they're there.

I have seen a lot of the chop jobs and they are great, that being said, actual copies at the event would be great. Plus, it would be a great boost for Rick's ego.
